In addition, the brewery exclusively uses the high-quality "King of Sake Rice," Yamada Nishiki, as the raw material for brewing, ensuring that the sake produced maintains the highest and most stable quality!
Unlike traditional sake with a robust character, Dassai Sake typically boasts rich floral and fruity aromas. Its taste resembles the sweetness of ripe cantaloupe and honey, making it an exemplar of elegant sake. Whether enjoyed on its own or paired with a meal, it's a sake that even those new to sake will appreciate.
How should Dassai Sake be enjoyed?
Dassai is a premium sake among Japanese sakes. Unlike the "light and dry" style of traditional sake, Dassai Sake is more akin to the sake king, "Juyondai," and places a stronger emphasis on creating a "fruity and aromatic" sake! When tasting Dassai, the key is to bring out its fruity aroma. If the sake is too cold, the aroma will weaken, and the acidity and bitterness will become more pronounced. Therefore, it is recommended to start tasting at a temperature of around 10 degrees Celsius.
Dassai Sake is an excellent choice whether enjoyed on its own or paired with food! Depending on the sake type, the range of compatible dishes is vast. It pairs perfectly with seafood, sashimi, and sushi. The refreshing nama (unpasteurized) sake variants in the series also go well with Cantonese stir-fry, yakitori, or other cooked dishes!
As for glassware, it is recommended to use sake cups made of glass or tin material. Alternatively, white wine glasses are also an excellent choice as they enhance the aroma of Dassai Sake.

How should Dassai Sake be stored?
Unopened bottles of Dassai Sake should be kept away from direct sunlight and high temperatures. Most regular Dassai products are pasteurized ("hi-ire" sake) and can be stored for an extended period at room temperature, around 20 degrees Celsius. However, for optimal storage, especially for some unpasteurized sake variants like "nama" sake, it is recommended to store them at a lower temperature, between -5 to 2 degrees Celsius.
Once opened, sake starts to oxidize and its aromas begin to dissipate as it comes into contact with air. If you can't finish the bottle all at once, we strongly recommend storing it in a refrigerator at 0-4 degrees Celsius and consuming it within a week for the best taste.
